Summary

Examples of new refrigeration technologies for meat are given: ultra-fast chilling of pork, ensuring preservation of quality of raw materials, reduction of weight losses and increase in the yield of final products; chilling and storage of smoked-cooked pork products. Also, the technologies are considered as follows: new technologies for freezing fruit, vegetables and berries in liquid coolant systems, allowing a reduction of the freezing time: technology for partial dehydration of raw materials prior to freezing as a means for preservation of produce quality; new technology for freezing raw materials (berries), which can be used in the food industry or be eaten without preliminary thermal processing. The condition of insulation for vegetables and fruit cold storage warehouses determines the possibility of long-term storage of products, including that in controlled environments.
