Summary
Recently by the use of mixed gases, packaging under modified atmosphere has been extended into the fresh food market, particularly in meat, fish and poultry. Fresh foods must remain fresh throughout their distribution chain and provide a reasonable shelf life for the retailer. This shelf life has now been extended by the use of chilled distribution/storage and packaging under a suitable modified atmosphere. The paper reviews the significance and effects of gas technology used in modified atmosphere packaging in terms of gas supply options, gases safety, integrity of gases and mixtures and also typical atmosphere applications.
