Summary
THE PATHOGEN PSYCHROPHILE GERMYERSINIA ENTEROCOLITICA WHICH IS DANGEROUS TO HUMAN HEALTH HAS RECENTLY BEEN OBSERVED IN MEAT AND DAIRY PRODUCTS AS WELL AS IN VEGETABLES WHICH ARE CONTAMINATED DURING CULTIVATION. THE YERSINIA ARE LIKELY TO MULTIPLY ON THE PRODUCTS DURING COLD STORAGE UP TO: 277 K (4 DEG C) AND DO NOT CAUSE ANY DETERIORATION OR VISIBLE CHANGE. IT IS ONLY POSSIBLE TO DETECT THEM BY MICROBIOLOGICAL STUDIES. THE AUTHORS HAVE STUDIED THE MORPHOLOGY OF YERSINIA. PROPHYLACTIC MEASURES ARE RECOMMENDED TO PREVENT PROPAGATION OF YERSINIA IN MEAT FACTORIES AND COLD STORES.
