Summary

The multicentre study focused on foods, including ice cream and sorbets, sold by street vendors. The microbiological quality of the foods and the vendor profiles were assessed. The poor microbiological quality of many foods was shown to be a potential hazard and vendor education emerged as a crucial factor in the prevention of foodborne diseases.
