Summary

Ensuring both food quality and quantity to 6 billion inhabitants is the challenge on the eve of the third millennium. Appropriate use of refrigeration is sure to be a major contributor to successfully addressing this problem. This address will detail the differentiated challenges for developed and developing countries: health, safety, service and satisfaction for the former, and lower postharvest losses and good preservation of protein foodstuffs for the latter. Issues and opportunities for the refrigeration and associated industries will be discussed and some potential new developments in fields such as cleanability and flexibility of equipment, regulation of ambient conditions, traceability of foods, energy consumption, interface management and temperature levels will be highlighted.
