Summary
This report defines the cold-chain concept (from research to food preservation; from empirical preservation to scientific preservation; the use of refrigeration and the modification of production structures; limits of hygiene in preservation using refrigeration). The article describes the principles underlying the "new approach" designed to improve product quality and safety in terms of hygiene, based on ensuring that those involved are made aware of their responsibility, within the framework of new regulations.
