Summary
THE CATERING INDUSTRY IS ENTERING A PERIOD OF CHANGE IN FOOD PRODUCTION TECHNIQUES. THE USE OF STORAGE TEMPERATURES BELOW AMBIENT WHICH INHIBIT QUALITY CHANGES CAN IMPROVE THE ECONOMICS OF CATERING OPERATIONS BY SEPARATING PRODUCTION FROM CONSUMPTION AND PROVIDE A HIGH-QUALITY PRODUCT TO THE CONSUMER. PRODUCTS FROM THE FOOD MANUFACTURING INDUSTRY AND PRODUCTS PRODUCED BY CATERERS THEMSELVES ARE LIKELY TO BECOME MORE INTEGRATED INTO NEW CATERING SYSTEMS IN THE FUTURE.
