Summary
The food industry requires safety, reasonable price and delicious food, therefore we need optimized freezing and thawing systems. In order to realize total optimization, the producer, food processor, distributor and consumer have to cooperate. Detailed examples are development of a thawing technique using high frequency, the freezing, storing and thawing of food boxes and development of tuna processing system, all from the consumer point of view on taste. The report describes in detail the optimization process.
