EIGHT LOTS OF PARTIALLY CURED SAUSAGES WERE STORED IN EXPERIMENTAL ROOMS AT TWO VARIABLE TEMPERATURES SIMULATING TRANSPORT CONDITIONS IN REFRIGERATED WAGONS AND CONDITIONS IN DISTRIBUTION COLD STORES. THE OPTIMUM TEMPERATURE REGIME WAS 273, 270, 267 K (0, -3, -6 DEG C) ENABLING A 60 DAY STORAGE PERIOD.
