THE TESTS SHOW THAT IONIZATION IS NOT SUITABLE FOR THE STORAGE OF PEELED TOMATOES, AS IT MARKEDLY CHANGES ORGANOLEPTIC CHARACTERISTICS AND TEXTURE. ON THE CONTRARY, FREEZING APPLIED TO CUBES OF PEELED TOMATO SEEMS TO BE FEASIBLE, IN SPITE OF A SIGNIFICANT LOSS OF RAW MATERIALS, BUT WASTES CAN BE RECOVERED ON THE PROCESSING LINE OF TOMATO CONCENTRATE.
