Summary
After a brief review of cryogenic technology, it is compared with mechanical refrigeration: less energy efficient, but lower investment costs and good operational flexibility. The equipment was improved to adapt to all types of product in the fields of cleaning, automation and compactness. The two technologies are more and more combined in order to benefit from their specific advantages. The cryogenic equipment used in this context was improved to obtain a crusting of the product by convection (direct contact), spraying and convection, with subsequent quick-freezing carried out mechanically. The quick-freezing plants can be monitored to control the flow of produce, operation and management. J.L.
