Summary

The physiological aspects of ripening persimmon fruit and the influence of some preharvesting treatments on picking time are summarized, along with the ripeness indices. The principal diseases in post-harvest fruit from different sources are listed and discussed. The surveyed microbiological infections include alternariosis, due to Alternaria alternata; green mould, caused by Penicillium expansum and other Penicillium spp; grey mould from Botrytis cinerea, and that caused by Rhizopus stoloniferum. The reviewed post-harvest physiological diseases are: Melanogram, a black peel crackle, uncoloured peel crackle due to maturation, apex browning, and carbon dioxide injuries. The problems in post-harvest artificial maturation are discussed according to the astringency features of persimmon cvs, and the most advanced techniques are described. Storage and transport technology, including time, temperature and controlled-atmosphere conditions, is reviewed and discussed. A.P.
