Summary
Garden picked mature but unripe fresh persimmon fruits were unipackaged in different thicknesses of polyethylene and stored at room (18.5-30 °C) and refrigerated temperature (6 plus or minus 1 °C). Chemical analyses (sinapine, catechin and leucoanthocyanidine), weight loss and texture were studied. Low temperature combined with unipackaging in polyethylene film performed better for the maintenance of overall fruit quality during postharvest storage.
