Pilot-scale installation for freezing of foodstuffs in a dispersive flow.

Summary

The plant consists of a technical module, an R22 refrigerating installation, with a low-temperature liquid circulation system. The technical module consists of two vertical insulated cylinders in which the products to be frozen are moved downwards (first cylinder), then upwards (second cylinder) with Archimedian screws. A low temperature fluid which is cooled in an R22 system passes through these cylinders, freezing the entrained products. This apparatus is a prototype for industrial trials of the process. Equally one wishes to carry out research and measurements of the heat transfer coefficient between the cold fluid and the product.
