Planning seafood cold storage.

Author(s) : KOLBE E., KRAMER D.

Type of monograph: Report

Summary

The report is written for processors in the cold storage planning stage. Current seafood processing improvements such as controlled freezing, transport, and storage help to even out seasonal catch rates, providing a more uniform supply of high quality raw material to consumers and to secondary processors. Some of this secondary value-added processing is now getting under way in Alaska. Extract of contents: 1. Designing the facilities (buildings, refrigeration, cold storage units in Alaska). 2. Storing frozen product (seafood temperature and shelf life: the processes and causes of quality loss; recommended frozen storage conditions).
