Summary
The results obtained show that tomatoes cannot be chilled in this way due to their tendency to splitting, specific texture and large amounts of juice produced during thawing. The technologies of vegetable chilling in liquid gases may be applied in the case of Brussels sprouts, if the cost of this process is economically justified. Cauliflowers can be chilled in liquid gases, as their high quality is maintained after thawing.
