Summary

The aim of this work was to clarify some aspects of postharvest modifications of freshness and bacteriological parameters of mussels. Several mussel groups were studied for quantity (related to mussel dimensions: F index) and pH of intervalvar liquor, body pH, foot pH, Mm abductor pH and trend of total and faecal coliforms, and after byssus experimental contamination.
