THE AUTHORS PRESENT THE RESULTS OF TESTS CARRIED OUT IN ORDER TO SET UP SPECIFIC PRECOOLING METHODS FOR BLACKCURRANTS, RASP-BERRIES AND STRAWBERRIES. THEY RECOMMEND THAT AT ALL STAGES OF THE UPGRADING PROCESS, FROM THE PRODUCER TO THE CONSUMER, THE COLD CHAIN IS PROVIDED, IN ORDER TO EXTEND SHELF LIFE, MAINLY FOR HIGHLY PERISHABLE PRODUCTS.
