Summary

BASING ON THE LITERATURE OF THE TEN RECENT YEARS, THE AUTHORS DISCUSS METHODS FOR CONCENTRATING LIQUID FOODSTUFFS, WHICH, UP TO NOW, HAVE NOT BEEN USED IN POLAND. INDUSTRIAL PLANT, USED IN DEVELOPED COUNTRIES FOR THE CRYSTALLISATION OF THE CONCENTRATE AND ITS SEPARATION FROM ICE, ARE DESCRIBED. THE ECONOMIC AND QUALITATIVE ASPECTS OF FREEZE-CONCENTRATION ARE COMPARED WITH OTHER CONCENTRATION PROCESSES SUCH AS EVAPORATION, FILTRATION ON MEMBRANES, REVERSE OSMOSIS.
