Summary

TESTING CHERRY AND SOUR CHERRY COMPOTES PRODUCED FROM MECHANICALLY HARVESTED FRUIT. COMPARISONS BETWEEN SEVERAL VARIETIES OF FRUIT TRANSPORTED IN SMALL AND LARGE VOLUME CRATES AND CONTAINERS FILLED WITH DIFFERENT QUANTITIES OF SALT-ICE MIXTURES FOR TRANSPORT AND STORAGE. RESULTS OF THE COMPARATIVE TESTS ARE OUTLINED WITH RECOMMENDATIONS CONCERNING THE QUANTITIES OF ICE TO USE. THE TRANSIT TIME FROM THE PRODUCTION ZONES TO THE PROCESSING PLANT MUST BE KEPT TO A MINIMUM IN ORDER TO PRESERVE PRODUCT QUALITY.
