Summary

THE SO-CALLED STONE FRUITS CONSTITUTED BY THEGENUS PRUNUS, INCLUDE PEACHES, PLUMS, CHERRIES AND APRICOTS. PEACHES (INCLUDING NECTARINES) ARE CONSUMED FRESH ACCOUNTING FOR ABOUT 70% OF THE PRODUCTION, MOST OF WHICH ARE THE WHITE FLESHED CULTIVARS. CONCERNING USE FOR CANNING, JUICE AND FROZEN FRUITS, THE YELLOW AND NON-MELTING FLESHED PEACHES ARE AVAILABLE BUT THE PRODUCTION IS ONLY 15.8% OF THE TOTAL PRODUCTION PROCESSED BY CANNING. SINCE PEACHES ARE HIGHLY PERISHABLE ALTHOUGH SHELF LIFE DIFFERS AMONG CULTIVARS,PRECOOLING TECHNIQUES, ESPECIALLY FORCED AIR COOLING, ARE UTILIZED IN ORDER TO SLACKEN RIPENING AND REDUCE DETERIORATION PRIOR TO TRANSPORTATION.
