Summary
The consumption and production of entrées made with dough are increasing: pizzas, quiches, pies, etc. The extraordinary international development of pizzas (60,000 tonnes/year in Europe) is a particular example. The habits of European countries in the process of integration are studied, together with the specific role of French and Danish specialities in German and European markets. Recent changes are also analyzed: prepared specialities constituting a proper meal, fish products, regional specialities which are marketed under the aegis of tourist promotions. Y.G.
