Summary
The application of pulsed light is considered as being a promising alternative in the decontamination of packaged foodstuffs and in the treatment of liquids. Its efficacy has now been experimentally proved in the field of decontamination of products at surface level. Recent studies have demonstrated that this treatment is effective on thin-layer powdery products. The mode of destruction of micro-organisms remains to be investigated.
