QUALITY CONTROL IS THE TASK OF THE PRODUCER. QUALITY ASSURANCE STARTS WITH ESTABLISHMENT OF STANDARDS WHICH APPLY WHEN THE PRODUCT REACHES THE CONSUMER. THE AUTHORS DISCUSS THIS AND SUGGEST THAT THE WORD FRESH USED TO DESCRIBE FISH SHOULD INDICATE THAT THE FISH WAS ICED IMMEDIATELY AFTER CATCH AND WAS NOT MORE THAN 2 DAYS OLD. FISH 7 DAYS OLD OR LESS AND IN ICE AFTER THE CATCH SHOULD BE INTRODUCED INTO THE FROZEN FISH DISTRIBUTION CHAIN. C.R.F.
