THE STUDIES ENABLED THE AUTHORS TO DETERMINE THE RATIONAL BLAST FREEZING CONDITIONS OF HEN CARCASSES PACKED IN FILMS OR UNPACKED: TEMPERATURE: 233 K (-40 DEG C), AIR VELOCITY: 5 M/S. THESE CONDITIONS PROVIDE A FREEZING RATE OF 2.5 CM/H. THEY PRODUCE A HIGH QUALITY PRODUCT, DECREASE WEIGHT LOSSES AND INCLUDE THE FREEZING PROCESS IN THE FREEZING LINE FOR POULTRY. R.R.
