REPORT OF AN EXPERIMENTAL STUDY ON THE LACK OF ACCURACY IN TEMPERATURE MEASUREMENT. THE AUTHORS ANALYZE THE CAUSES OF FLUCTUATION FOR PACKED < READY-TO-SERVE > PRODUCTS, AND THE ERRORS DUE TO PROBES AND TO THE DIFFERENT STAGES OF ALLOTMENTS (PALLET, CARDBOARD, BAG). THEY CONCLUDE THAT IT IS DIFFICULT TO REACHACCURACY TO WITHIN 2 DEG C, AND THEY PROPOSE THAT THIS BE USED AS THE LEVEL OF TOLERANCE. THEY DESCRIBE A METHODOLOGY FOR TEMPERATURE RECORDING. J.R.
