Summary

This document includes the papers presented during the Conference, held in Evreux (France), on January 18, 1994. Five papers were presented on the topic: cold production in the face of new environmental requirements: CFC phase-out and the future of HCFCs - national challenges; regulations; the industrial solutions proposed; the responses of equipment manufacturers; management of cold rooms: control of the cold chain and its interfaces. Seven papers were presented on the topic: last developments of refrigeration in the agro-food sector: bacteria and foodstuffs; microbiology of minimally processed food and ready-to-serve food; modified atmospheres; combining refrigeration, additives and atmospheres; recent developments of cryogenic gases in the food industry; current and future methods of thawing and tempering; microwave methods.
