Summary
The combined effect of lactate and diacetate for suppressing outgrowth of Listeria monocytogenes in ready-to-eat meat and poultry product is well known. Recent studies targeted the evaluation of the antilisterial effectiveness of an alternative ratio of lactate to diacetate compared to the ratio currently used in the industry.
