Summary
The article highlights how moisture loss in roots and tubers can be calculated using vapour pressing deficit, transpiration coefficients and the air velocity. A number of practical choices are outlined, and the factors affecting losses such as temperature tolerance, rate of heat discharge, number of turnovers, cooling system and quality of cooling and climatic control are discussed. Advice is given on how to prevent wilting and extreme moisture loss.
