Summary

THE PAPER LOOKS AT COOLING SYSTEMS FROM A PRODUCT QUALITY POINT OF VIEW. THE COOLING-DOWN TIME, UNIFORMITY OF TEMPERATURE AND WEIGHT LOSS OF THE PRODUCT THROUGH EVAPORATION CAN BE THE MAIN CRITERIA TO ASSESS THE QUALITY OF A COOLING SYSTEM. THE MECHANISM OF THE WITHDRAWAL OF WATER FROM A PRODUCT DURING COOLING DOWN AND STORAGE IS GIVEN SPECIAL ATTENTION. THE BACKGROUND AND ADVANTAGES ARE EXPLAINED OF THE < SHORT ON/LONG OFF > -METHOD OF EVAPORATOR -OPERATION FOR FRUIT STORES. THE CONSEQUENCES OF CONSIDERATIONS ARE REVIEWED IN RECENTLY CONSTRUCTED COOLING PLANT IN FRUIT AND VEGETABLE PACKING STATIONS IN HOLLAND AND BELGIUM.
