Summary
Changes in contents of vitamin C and chlorophyll pigments, antioxidant activity and sensory properties were determined in samples of alfalfa (Medicago sativa L.) sprouts stored under the following conditions: 1) ChD - home refrigerator (4-6°C); 2) KCh - refrigerating chamber (0 plus or minus 1°C); 3) MAP - under modified atmosphere (5% O2, 10% CO2, 85% N2) in a refrigerating chamber (0 plus or minus 1°C). It was found that the sprouts could be kept for up to 4 days in the home refrigerator (ChD) while under the modified atmosphere (MAP) for 12 days, i.e. 3-fold longer. The most important criterion deciding of a shelf life of alfalfa sprouts is their colour related to the content of chlorophyll pigments, but also their texture as well as smell and taste affect the shelf life.
