THE REFRIGERATION PROCESSES FOR COOLING MILK ON THE FARM AND IN THE DAIRY PLANT ARE DESCRIBED. A SPECIAL CHAPTER IS DEVOTED TO EXCHANGERS: VERTICAL OR CIRCULAR PLATES, MIXTURE AND SURFACE CONDENSERS (FOR COLD ROOMS AND CURING ROOMS), COOLING TUNNELS, FLUIDISED BEDS. THE CONDITIONS OF THE BULK COOLING OF MILK ON THE FARM ARE REPORTED. THE MAIN POINTS WHERE REFRIGERATION IS USED IN THE DAIRY PLANT ARE REVIEWED.
