THE PROTEOLYTIC EFFECT OF 3 SELECTED PSYCHROTROPHIC BACTERIA ISOLATED FROM SPANISH RAW MILKS AFTER LONG TERM TRANSPORT, WAS EVALUATED. PSEUDOMONAS FLUORESCENS DEGRADED NOT ONLY THE CASEINS BUT ALSO THE WHEY PROTEINS ALREADY AFTER 3 DAYS OF INCUBATION AT 280 K (7 DEG C). FLAVOBACTERIUM SP AND CYTOPHAGA SP SHOWED A HIGH LEVEL OF PROTEOLYSIS AFTER 21 DAYS AT 280 K.
