SELECTIVE CRYOEXTRACTION INCREASES IN MUSTS THE CONTENT OF VARIOUS COMPONENTS FAVOURING QUALITY IMPROVEMENT. BY SELECTING OPERATING CONDITIONS, THE USER CAN CHOOSE BETWEEN SELECTION AND < SUPEREXTRACTION >. SELECTION PROVIDES RICHER MUSTS, BUT WITH VARYING VOLUME LOSS. BY SUPEREXTRACTION THE EFFECTS OF FREEZING PROVIDE A BETTER FREEING OF CELL CONSTITUENTS, RESULTING IN RICHER MUSTS WITHOUT LOSS OF JUICE VOLUME. DIFFERENT FIELD TESTS SHOWED THE FEASIBILITY OF THIS PROCESS.
