Summary

FILLETS OF THREE SPECIES OF ANTARCTIC FISH (NOTOTHENIA NEGLECTA, NOTOTHENIA ROSSII MARMORATA AND CHAENOCEPHALUS ACERATUS) WERE STORED AT 241 K (-32 DEG C) AND EVALUATED BY A TASTE PANEL. CH. ACERATUS MAINTAINED A HIGH QUALITY DURING THE 18 MONTHS. N. ROSSII MARMORATA WAS FOUND TO BE SOMEWHAT INFERIOR IN THIS RESPECT OWING TO ITS TASTE, N. NEGLECTA REACHED THE LIMIT OF ACCEPTABILITY AFTER 12 MONTHS OF STORAGE.
