Summary

THE AUTHORS RESEARCHED ALTERNATIVE METHODS OF SHORT-TERM STORAGE OF FISH JUST CAUGHT (ON THE INTERNAL LAKES AND SEAS OF THE SOVIET UNION), GIVEN THAT REFRIGERATING FACILITIES ARE OFTEN LACKING. ONE METHOD WAS TO USE A 0. 2% SOLUTION OF FATTY ACID. ANOTHER CONSISTED OF KEEPING FISH FOR 8 TO 10 HOURS IN A SOLUTION OF 0.1-0.3% SODIUM PROPRIONIC ACID AND 2-3% TABLE SALT AT NO MORE THAN 293 K (20 DEG C), WITH AN AMBIENT TEMPERATURE OF 298-311 K (25-38 DEG C) AND WITH A 1:1 RATIO OF SOLUTION TO FISH. THE AUTHORS FOUND THAT THESE FISH WERE SUPERIOR TO THOSE OF THE CONTROL SAMPLE (STORED IN ICE) IN ORGANOLEPTIC QUALITIES AND IN LACK OF EXTERNAL DAMAGE, BRUISES AND FLABBINESS.
