Summary
For cylindrical bodies, the calculation of the inside pressure and stress at the frozen part of the fish body during freezing were carried out in tuna fish for three different systems; the -45 deg C calcium-chloride brine-immersion system caused greater gape in the frozen tuna body during freezing than the -45 deg C air-blast system and the -45 deg C still air system.
