Summary

This study demonstrates the feasibility and potential performance of a vacuum quick-cooling solid absorption unit, using the zeolite-water pair. The strong points of the system are: it does not use CFCs; quickness of treatment improves the sanitary quality of preserved food owing to short cooling cycles; it fits easily into the production cycle of central kitchens and it seems to be efficient. An industrial prototype could be built to confirm the results obtained during the tests.
