THE ULTRARAPID FREEZING IN A TUNNEL DOES NOT ENSURE THE PHYSICAL STABILITY OFEWE MILK CONTAINING LESS THAN 16% MILK SOLIDS; SODIUM CITRATE MUST BE ADDED TO AVOID PHASE SEPARATION. BUT THE < ULTRARAPID > PROCESS WITH LIQUID NITROGEN RESULTS IN A GOOD PRESERVATION OF THE TREATED MILK.
