This article presents a detailed calculation model enabling evaluation and comparison of the technical and economic aspects of different freezing techniques (immersion, air blast and cryomechanical freezing). This model relies on both established thermodynamic rules and on a study on the specific technical parameters of freezing techniques with respect to product behaviour.
