Summary

After a description of several systems used to register and control product temperatures throughout the cold chain, three case studies are presented: 1) management of refrigerated trucks and their temperature control devices, in a French company; 2) presentation and use of a container designed with a view to perfecting handling and distribution of perishable foods (with its temperature control device); 3) control of temperatures in display cases in a French supermarket.
