Summary

STUDIES WERE MADE TO DETERMINE THE THAWING CONDITIONS OF FRUIT MIXTURES AND TO IMPROVE PRESERVATION OF THE ORGANOLEPTIC AND NUTRITIVE PROPERTIES. THE QUALITY OF THE THAWED MIXTURES IS ESTIMATED FROM VARIATION IN CHEMICAL COMPOSITION, COLOUR AND MICROBIAL SEEDING. THE RECIPES ARE GIVEN FOR THE MIXTURES WHICH WERE USED.
