THE PAPER INTRODUCES THE CHARACTERISTICS OF CITRUS FRUITS, THE MANUFACTURE OF JUICE, CANNING AND FREEZING AND GROWING AREAS, THE PRODUCTION AND THE CONSUMPTION VOLUME OF FRUITS OF MAJOR CITRUS SPECIES AND CULTIVARS. THE DESIRABLE RANGE OF MAJOR PHYSICAL QUALITY VALUES OF SATSUMA MANDARIN FRUITS ARE SPECIFIC GRAVITY OF 0.85-0.90 KG/DM3 WITH A VARIATION OF 25-28%.
