THE CHILLING OF EDIBLE OFFALS USING CRYOGENICS OR A VAPOUR COMPRESSION SYSTEM: A COST COMPARISON.

Summary
OFFALS WERE CHILLED IN A CO2 TUNNEL. THE RESULTS WERE COMPARED TO THOSE OF A MECHANICAL SYSTEM DESIGNED FOR THE CHILLING OF OFFALS. THE ENERGY COSTS OF THE TWO SYSTEMS WERE DETERMINED. CAPITAL COSTS, FIXED ANNUAL COSTS, DEPRECIATION AND OTHER COSTS WERE STUDIED. THE RESULTS SHOW THAT THE CO2 SYSTEM IS LESSEXPENSIVE DURING THE FIRST SEVEN YEARS OF OPERATION, BUT AFTER THAT TIME THE SYSTEM BECOMES INCREASINGLY EXPENSIVE.
