The effect of preharvest bleaching on the storage behaviour of minimally processed endive under modified atmosphere.

Summary

Sensory and physiological parameters in quality degrading processes were measured during storage, and results were analyzed by means of multivariate data analysis techniques. It was found that the effect of the reharvest bleaching treatment upon overall quality loss during storage depended upon both the effectiveness of the treatment in altering the physiological characteristics of the heads, and upon storage conditions. Under the conditions investigated well bleached material preserved better due to its lower respiration activity, which resulted in a delay of anaerobic process and carbon dioxide damage.
