Summary

The extent to which different bacteria grow under modified atmosphere packaging conditions depends on a variety of factors, in particular the packaging atmosphere and storage temperature. The aim of the study was to examine the effect of packaging under vacuum and different gas atmospheres on the developing microflora and associated spoilage patterns of lamb primals stored at 5 and 0 °C.
