Summary
The theoretical model of the match between the running parameters and the performance index for the blast freezer is established in this paper. The analysis shows that the evaporation temperature, the air speed and their match are important factors which affect the freezing time, production output and the energy consumption of the freezer and that the air flow organization should pay more attention to keep the air speed low and the air temping at a minimum to achieve energy saving.
