Summary
Processing equipment for ice cream manufacture has undergone radical changes to keep in step with requirements for improved yields, rapid product change-over, hygiene and product safety. A modern automatic production process for extruded novelties is discussed with the help of a process flow diagram. The control and monitoring system enables one operator to supervise a number of freezers, and detailed attention to quality through accurate product specification is paramount. G.R.S.
