Summary
In the continuous quick-freezing plant, the dynamic measuring of the freezing food's temperature is still a rather difficult problem. With the most newly developed and patented Tracing Temperature Acquisition Device, the tracing measurement of the temperature of the continuous quick freezing food can be done correctly and conveniently. This paper thoroughly introduces the working principle of the Tracing Temperature Acquisition Device and the dynamic freezing curve of the prawn and small-packed block and some other foods which were all first tested with this instrument. This paper can be of use in designing quick-freezing plants.
