Summary

This article presents the Spanish translation of IIR-IIF Bulletin reference 1997-0968. Regulations, large-scale distribution and consumer behaviour have had for effect to modify the transport and marketing of fish, shellfish and molluscs. Over the last 10 years, developments in the transport of chilled produce has been marked by these phenomena: pallets have come into general use, thus allowing faster loading and unloading; greater and greater use has been made of class C refrigerated vehicles, which ensure refrigerated conditions in two ways: with ice and using a refrigerating unit; the use of materials with better hygienic qualities; greater numbers of chilled dispatching platforms equipped with independent loading-unloading stations and insulated doors. The outstanding developments in the area of sales have been: the predominance of large-scale distribution (53% of sales of fresh fish in France); the development of sales of fresh, packaged products leading to entirely different equipment, given the absence of ice; the establishment of standards for characterizing the performances of display cabinets according to atmospheric factors such as temperature and relative humidity.
